My favorite Chocolate Chunk Biscotti cookie recepie
2.5 cups of self-raising flour (if you don't have self-raising flour use regular baking flour and add 2 tsp baking powder)
0.5 tsp salt
1 cup sugar
100 g dark chocolate bar smashed up into chunks
1 tsp rose water
100 g chopped almonds (optional)
a bit of water
Pre-heat oven to 180 degrees C.
Place all dry ingredients together and mix well. In a food processor or big bowl add the eggs and the rose water to the dry ingredients and mix until it becomes a thick sticky paste that comes away from the sides. You may need to add a small amount of water, but don't over do it!!
Add the chopped chocolate and nuts last and mix in well. Separate the dough into two halves. Place a piece of baking parchment onto a baking tray and roll each half of the dough into a log that is about 1 inch short of the length of the tray at each end. This is a sticky business!
Place the tray into the middle of the oven and bake for 25 min. Remove tray and let rest on counter for 10 min (DO NOT TURN OFF OVEN).
After 10 min cut the biscotti into biscuits about 1 inch wide or so. Place back on the baking tray and put back into the oven for another 10-15 min. If you like your biscotti rock hard than bake longer, but I like mine a bit soft and gooey on the inside so I go for the 10 min option. YUM
